Mary Berry’s Rainbow Tuna Pasta Bake
Serves 6
250g/9oz penne pasta
1 onion, roughly chopped
50g/2oz butter
50g/2oz plan flour
600ml/1 pint hot milk
100g/4oz mature cheddar, grated
185g can tuna in oil, drained
189g can sweetcorn, drained or frozen peas
1 Heat the oven to 200c/180CFan/Gas 6
2 Bring a large pan of salted water to the boil, then add the pasta and onion, and cook for about 10-12 mins until tender, or according to pack instructions. Drain well.
3 Meanwhile, melt the butter in a small pan, whisk in the flour and cook for 1 minute. Gradually whisk in the milk, stirring until smooth and thickened. Season with salt and black pepper and add most of the grated cheese.
4 Mix the pasta with the cheese sauce, flaked tuna and sweetcorn or peas and turn into a baking dish. Sprinkle with the remaining cheese and bake for about 20 mins until browned.
Prepare ahead; this can be prepared ahead and cooked in the oven to serve.
