Nick Robinson’s quick comfort food recipes

I’m no cook. For years I’ve done the same things over and over again. Omelettes. really good omelettes. Fish. Lots and lots of fish. I even learned to filet a gurnard once. And the greatest comfort food of them all – fish pie.

The lockdown has forced me to try just a little harder. Not a bad roast chicken the other day (even though I say so myself).

Then this – a tray bake which is a posh way of saying chuck some chicken, chickpeas, tomatoes, onion, garlic and rosemary in a roasting tray and shove it in the oven. (Sorry Rukmini Lyer. It’s a great recipe).

All this, though, has reminded me of how extraordinarily lucky I am.
